I have to admit one of the only things that makes February seem a little brighter is the fact there is a whole day dedicated to my favourite thing, pancakes! I eat them pretty much all year round so there really is no difference in one day but it excites me nonetheless. Every year growing up we would always gather around our table filled with a selection of toppings and take it in turns to embrace our creation. The wait in between seem to last a lifetime! Since ‘adulting’ not much has changed, I still treat pancake day as if it was some sort of public holiday and ensure it lasts as long as possible!
At the weekend I usually make the effort to create some sort of deliciously fluffy pancake stack, topped with fresh fruit and drizzled in maple syrup. On the day itself we always have crepes, just like the ones you can buy in Paris around the Eiffel Tower, so delicious! I thought I’d share some of my favourite recipes with you this Sunday.
For days when I’m feeling something a little more healthy I always go for Kate’s guilt free offering with strawberry and coconut. These are so delicious, totally filling for the morning ahead and I love the summery combination of toppings! For a lazy Sunday morning where no other than the fluffiest American pancakes will do, I always reach for this Jamie Olivier recipe. They do require a little more thought when it comes to the method but the final result is so satisfying and oh so photogenic. They are so versatile and work well with anything additional ingredients such as blueberries or chocolate chips! Finally, I can’t resist a simple crepe drizzled with fresh lemon juice and sprinkled with sugar. It’s the pancake day staple for me and we only ever eat them on this day.
