I love baking, especially at Christmas when I get to play around with different festive flavours and recipes! I’m obsessed with gingerbread as it’s so delicious and comforting at this time of year. I saw these little gingerbread biscuit bites coated in chocolate in Zoe’s Video here and I knew I had to try them! They are super simple to make, require hardly any ingredients and taste totally amazing too! They’ve gone down so well in my house and are perfect for any Christmas parties you might have coming up.
You will need:
1 pack of ginger nut biscuits / 1-2 tablespoons of cream cheese / 100g of milk chocolate / 100g of white chocolate / Decorations of choice, I chose a mixture of sprinkles! / Cocktail sticks
How to make… Start off by blending the whole pack of biscuits in a blender, if you don’t have one just pop them in a plastic food bag and crush them with a rolling pin to form a mixture of fine crumbs. Mix in a large tablespoon of cream cheese. You don’t want it to be too wet, so remember you can always add in more if you need the mixture to hold better. Once this is mixed in, use your hands to form little bite size balls of the mixture and place on a lined baking tray. After you have made around 10 balls, pop in the freezer for around 1 hour. Place in a cocktail stick to each gingerbread ball, melt the chocolate over some boiling water and dip each ball into the chocolate liquid making sure to coat it well. Decorate immediately with your choice of sprinkles as the chocolate sets fast! Leave them to set for around 15 minutes before removing the cocktail sticks. Keep them in the fridge and try not to eat them all at once!
These delicious gingerbread biscuit bites are so easy to make and are perfect for the festive season! I’ll definitely be experimenting with different biscuits, toppings and flavours for the next couple of weeks.
