Granola is one of my favourite quick and healthy breakfasts for the mornings where I don’t have much time. Finding a simple granola recipe that doesn’t contain seeds and nuts is really hard so I thought I would come up with my own. The great thing about this nut free granola is that it’s so basic you can adapt it to your own taste adding any ingredients you like! It really is the simplest thing to make and tastes delicious for breakfast, a healthy snack with yoghurt or as a healthier crumble topping!
You will need –
- 3 tablespoons of oil
- 5 tablespoons of honey or syrup
- 1 teaspoon of vanilla essence
- 6oz / 3 cups of oats
- 2 teaspoons of cinnamon
- 1 tablespoon of desiccated coconut
- 2 tablespoons of crushed almonds
Preheat the oven to gas mark 3/180°C and get a baking tray ready. Combine the oats, almonds and coconut into a bowl and mix together. In a saucepan melt the oil, vanilla, syrup and cinnamon together until it forms a well combined liquid. Pour this into the dry mixture and mix well so all the oats are covered. Pour the oat mixture onto the baking tray, spread evenly and cook for 15-20 minutes until it’s golden brown. Make sure to turn to oats over half way through so they get cooked evenly.
To Serve –
I love having mine for breakfast with milk or fruit and yoghurt like below. It’s so delicious and I love how simple it is. I keep it in a glass jar and it tends to serve about 5-7 small portions and lasts for roughly a week. I hope you enjoy this homemade granola as much as I do!
