The Sunday Post: Lemon & Blueberry Crumble Muffins


Apple crumble is one of my favourite traditional desserts, mainly because of the slightly addicting and delicious crumble topping! So anything thats sort of similar I’m more than likely going to love. These muffins have the perfect balance between a light and fluffy middle and a crispy golden topping, which for me, are my favourite muffins.


  • 18oz all purpose or plain flour
  • 10oz granulated sugar
  • 1 tbspn baking powder
  • 1 teaspoon salt
  • 6oz butter
  • 12oz blueberries (or however many you like)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 350ml milk
  • 4-6oz lemon curd


  • 3oz all purpose or plain flour
  • 4 tablespoons of sugar
  • 4oz butter
  • 1½ teaspoons grated nutmeg

– Makes 12 muffins


Method for topping:

  1. To make the crumble simply combine the flour, sugar and nutmeg into a bowl.
  2. Use a fork or your fingertips to work in the butter until you get small flakes and crumbs.
  3. Refrigerate until ready to use.

Method for muffins:

  1. Preheat the oven to 180°c/Gas mark 4 and line your tray with muffin cases.
  2. Whisk together the flour, sugar, salt and baking powder into a bowl using an electric mixer.
  3. Add in the butter and mix together (either with your hands or a paddle attachment) until the mixture goes crumbly.
  4. Gently toss in the blueberries.
  5. In a separate bowl combine the eggs, vanilla and milk.
  6. Make a well in the centre of the dry ingredients and pour in the wet mixture all at once.
  7. Fold the mixture gently until it’s all combined.
  8. Divide half the batter between your muffin cases.
  9. Top each with about 1 tablespoon of lemon curd and divide the remaining half of the mixture on top.
  10. Sprinkle the crumble topping over the muffins and bake for 30-35 minutes until the topping is golden brown.
  11. Test the muffins are cooked with a small knife to see if it comes out clean.


I prefer to enjoy these muffins warmed through as the flavours really stand out. Perfect for a summer garden party or to brighten a rainy afternoon indoors.
